Slow Roasted Tomatoes

The versatility of these sweet roasted tomato halves is amazing. You will want to put them on everything after you first make them.


  • 1 Pint Grape Tomatoes
  • 1.5 Tbl Olive Oil
  • 1 tsp Fine Sea Salt


  1. Preheat your oven to 325º, low fan if you have that option.
  2. Halve the tomatoes lengthwise and then toss with the olive oil and sea salt.
  3. Spread out the tomatoes in an even layer with the cut side facing up.
  4. Bake for 30 minutes. Check for doneness. Are they still acidic? A little too wet?
  5. Turn the oven down to 300º and continue to cook for another 10-20 minutes or until the tomatoes no longer have any acidity to them when tasted.
